Chocolate pancakes with Mango Sorbet

If I need a fast desert I often go for these spectacular looking fruit leather crêpes. You can make them in advance and store them for many months and in the moment of need you just pick them up and create some tasty cream to fill into them. There is even an easier version: cut mango into tiny slices and use it instead of cream. Believe me, every guest or your beloved person for which is this desert for will be amazed.

Crêpe (fruit leather) – for 1 piece:

1 ripe banana

1 Tbl spoon of fresh pressed lemon juice

1/2 tsp of raw cocoa powder

For filling:

Some soft fruit: mango, kiwi, pear, banana or Strawberry, etc.

Blend bananas, cocoa and lemon together in high speed processor. Pour this liquid onto a non sticky dehydrating sheet and create a shape of circle. Then place them into the dehydrator. Dehydrate over night or for 10 hours or more until completely dry. The fruit leather should not be sticky anymore.

Cut some fruits in tiny slices (mango or apple, pear, kiwi, etc.) Place slices all over the fruit leather in one layer. Then roll the fruit leather together and let sit for 30-60 minutes or even over night.

Mango Sorbet

1 frozen mango

1 frozen banana

Mix all ingredients together in food processor until you get creamy sorbet.

Serving

Be creative in arranging sorbet, crepes and fruit.

You can use date sirup or other fruits or nuts for decoration.

Chocolate Protein Shake

How are you dealing with craving after something sweet like chocolate or sweetened cup of coffee?

I sometimes do a chocolate drink. I use different recipes but this time I decided to use a protein powder from Sunwarrior with chocolate flavor which is in raw quality. As milk I mostly use almond milk which I make on my own with soaking nuts process or I simply mix my raw almond butter with water.

For this recipe I needed:

2 Tbs of Sunwarrios raw food protein powder with chocolate flavor (or another raw protein)
1 tsp raw cacao powder
1 tsp raw almond butter
400 ml water

You blend all ingredients in your blender and then you can already enjoy!

Matcha Wheatgrass Lucuma Breakfast Shake

One of those mornings where I was crawing after something replacing coffee. I was never really a big coffee drinker but there were times I used to be. During my studies in Regensburg there used to be every Tuesday and Thursday a „Kaffeestunde“ for all foreign students. It was served lot of coffee for everyone and sometimes also cake. It was great opportunity to meet with other foreign students, which helped to get fastly in touch with other people new in town.

So this is how I started to like coffee. But I was never a heavy coffee drinker. I enjoy it time to time. But most of the time I try not to drink coffee at all. I try to find alternatives like this matcha drink.

Ingredients

1 tsp matcha powder*

1 tsp lucuma powder**

1 tsp wheatgrass***

1 Tbs agave nectar

1,5 cup of filtered water

This is a really an easy recipe. Blend all ingredients with your blender or protein shaker and enjoy immediately or on your way to work in your favourite mason jar or coffee cup.

*Matcha powder

This strong superfood is known for about a millennium Japan. Young green tea leaves are steamed, steamed and de-vined before being stone-ground into very fine powder.

Matcha is extremely high in antioxidants.

This green powder contains catechin (ECGg), which is  strong in the fight against cancer. Matcha contains 100 times more catechins than any other green tea on the market.
